  1. You need 3/4 cup of plain flour or spelt flour.
  2. Prepare 1/2 cup of millet flour (juwar) can omit.

Potato Bhajis step by step

  1. Mix all the ingredients together with cold water into a smooth batter.
  2. Heat the oil.
  3. Once hot, add 2 teaspoons of the oil to the batter and mix in the bicarbonate of soda until a froth forms on top.
  4. Dip each slice of potato into the batter and carefully lower into the oil turning frequently ensuring the potato cooks thoroughly on a medium heat.
  5. Serve with a coriander dip, as per previous post. Add Greek yogurt, a little cumin powder and salt to taste and stir into a dip texture.
