Ingredients of Potato Bhajis
- You need 3/4 cup of plain flour or spelt flour.
- Prepare 1/2 cup of millet flour (juwar) can omit.
- Prepare 3/4 cup of chick pea flour.
- Prepare 2 teaspoon of coarse black pepper.
- Prepare 1 teaspoon of sea salt.
- Prepare 1 teaspoon of turmeric.
- It’s 1/2 teaspoon of red chilli powder or to taste.
- Prepare 1.5 teaspoon of coriander, crushed.
- You need 1 teaspoon of cumin seeds.
- Prepare 1 teaspoon of ajwain seeds.
- Prepare 1/2 teaspoon of cumin powder.
- You need 1 teaspoon of lemon juice.
- Prepare 2 teaspoon of ginger, minced.
- You need 4 of green chillis, minced.
- You need Handful of coriander, chopped.
- You need of Rapeseed oil to fry.
- It’s 1/2 teaspoon of bicarbonate soda.
- It’s of Thinly sliced potatoes or vegetables of choice.
Potato Bhajis step by step
- Mix all the ingredients together with cold water into a smooth batter.
- Heat the oil.
- Once hot, add 2 teaspoons of the oil to the batter and mix in the bicarbonate of soda until a froth forms on top.
- Dip each slice of potato into the batter and carefully lower into the oil turning frequently ensuring the potato cooks thoroughly on a medium heat.
- Serve with a coriander dip, as per previous post. Add Greek yogurt, a little cumin powder and salt to taste and stir into a dip texture.
